A lovely fruit tart with an easy to make gluten free crust, a perfect dairy free vanilla pastry cream, and topped with your favorite fruit or berries. (grain free and paleo)
INGREDIENTS
For the Tart:
3 cups almond flour
¼ teaspoon salt
⅛ teaspoon nutmeg
½ cup butter or palm shortening
1 teaspoon apple cider vinegar
1 egg
For the Pastry Cream:
6 egg yolks
2 tablespoons honey
1 ½ teaspoons gelatin
14 ounce-can coconut milk
2 ripe bananas
1 teaspoon vanilla extract
For the Topping:
3 cups mixed fruit
INSTRUCTIONS
For the Tart:
Preheat oven to 325° F.
Add all dry ingredients to the food processor and pulse 1-2 times.
Add diced butter or palm shortening and pulse until the butter is pea-sized.
