Pineapple Chicken and Rice

Pineapple Chicken and Rice Dinner Recipe. Tender chicken cooked in a sweet pineapple honey Dijon sauce and served over rice.



Ingredients
1 and half pounds boneless chicken breasts
1 teaspoon dried thyme
1/2 teaspoon salt
1/8 teaspoon pepper
1 tablespoon vegetable oil
1 can 20 oz. sliced pineapple save the juice for the sauce
1 tablespoon cornstarch
1/4 cup Dijon mustard
1/4 cup honey
2 garlic cloves minced
4 servings of cooked rice.

Instructions
Season chicken with thyme, salt and pepper.
Over medium heat brown the chicken in the vegetable oil.
Drain pineapple slices and reserve the juice.
Combine cornstarch and 2 oz. of the pineapple juice and set aside.
In a separate bowl combine remaining juice with mustard, honey, and garlic.

Breakfast Cookie

These No-Bake Breakfast Cookies are easy to make, healthy, packed with protein and simply delicious. They can be whipped up in less than 5 minutes and stored for up to two weeks.



INGREDIENTS
3/4 cup peanut butter
1 Tablespoon honey or maple syrup
1 teaspoon vanilla
1-3 Tablespoons chia seeds
3/4  cup old fashioned oats
OPTIONAL MIX IN'S: 1/4 CUP MINI CHOCOLATE CHIPS, CHOPPED ALMONDS, RAISINS, PUMPKIN SEEDS, PROTEIN POWDER, FLAXSEEDS

INSTRUCTIONS
Place the peanut butter, honey and vanilla in a microwavable bowl and microwave the ingredients for  20 seconds.
Stir the mixture until well combined then add in the remaining ingredients (and any extra mix-in's).
Stir well and ensure everything is well incorporated.

Roll the mixture into 8 balls and place the balls on a baking tray lined with parchment paper. Press the balls flat slightly and place them in the fridge for at least an hour to set.

Ingredients
(2) 8 oz containers Cool Whip thawed
1 1/2 lbs Strawberries hulled and sliced
1 1/2 packs Graham Crackers

Instructions
Spread a 1/2 container of whipped topping in a layer on the bottom of an 8x8" pan.
Add a layer of graham crackers, breaking as necessary to cover whipped topping.
Top with another 1/2 container of whipped topping and smooth with a spatula.
Add 1/3 of the strawberries in an even layer.

A low carb fajita burrito lettuce wrap is the perfect way to have your Mexican food on a low carb diet. All of those Mexican flavors wrapped up for a handheld lettuce burrito!



Ingredients
Meat. Marinade
1/4 cup olive oil
2 tablespoons lime juice
2 cloves garlic, crushed
1/2 teaspoon salt
1/4 teaspoons cumin
1/4 teaspoon oregano
1 lb beef steak, cut into thin strips
Lettuce Wraps
1 onion, sliced
2 cups pepers sliced
1 tablespoons olive oil
1/2 teaspoon salt
1 teaspoon chili powder
18 leaves iceberg lettuce
3/4 cup shredded cheese
1 avocado, thinly sliced
Instructions
The night before, mix the marinade and add with the meat to a large zipper bag. Make sure all the meat is covered with the marinade.

The next day, add the oil to a large saute pan and heat up to medium high. Add the meat mixture as well as the salt and chili powder. Cook for about 10 minutes until the meat is browned.

8 slices bacon
1/3 cup red onion, diced

1/2 cup sunflower seeds

1/2 cup mayonnaise
1/4 cup plain yogurt

INSTRUCTIONS
Preheat the oven to 400 degrees fahrenheit. Add the bacon slices to a parchment lined baking tray and cook for 15 minutes or until crispy. Remove the bacon from the oven and transfer to a paper towel to dry and cool.

Tomato Quinoa Salad

It's time to add another tasty quinoa recipe to our meal prep game! This Tomato Quinoa Salad is fast, flavorful, and easily made in advance for speedy lunches and sides for work, school, or home!Feel free to double this recipe if needed, it's so easy to do!



Ingredients

1/2 cup dry quinoa
3/4 cup water
2-3 cups chopped/sliced tomato
15 oz can chickpeas, drained and rinsed
1/4 cup chopped green onion
1/4 cup fresh lime juice (from 2 limes)
2 TBSP avocado oil
1 clove garlic (smashed and minced)
1 TBSP fresh chopped parsley
1/2 tsp ground cumin
1/4 tsp sea salt
1/8 tsp pepper
additional fresh chopped parsley to taste

Instructions
First rinse and drain your quinoa using a mesh strainer or sieve. Bring a small pot to medium heat and lightly toast the quinoa to remove any excess water. Stir as it toasts for just a few minutes. This step is optional but really adds to the nuttiness and fluff factor of the quinoa! Next add your water, set burner to high, and bring to a boil. Once boiling, reduce heat to low and simmer, covered with the lid slightly ajar, for 12-13 minutes or until quinoa is fluffy and the liquid has been absorbed.

Bang bang cauliflower

Cauliflower gets battered, baked and then topped off with a sweet and spicy chili sauce!



INGREDIENTS
Cauliflower: 

1 cup gluten-free flour (can sub regular flour, spelt flour…etc.)
1 cup almond milk
1/2 tsp salt
1/2 tsp pepper
1 head of cauliflower, cut into florets
Bang bang sauce: 

1/3 cup sweet chili sauce
1 tsp sriracha
1 tsp soy sauce
2 tsp lime juice
2 garlic cloves, finely chopped
INSTRUCTIONS
Preheat the oven to 450 degrees F and line a baking pan with parchment paper
Mix the flour, almond milk, salt and pepper together in a bowl until smooth.
Dip each piece of cauliflower into the batter, let any excess batter drip off then place the cauliflower bites on the baking pan.

Creamy Chili Sauce

Heat sesame oil in a large skillet and place over medium heat.

Add white parts of green onions, diced red onion, and garlic and saute, stirring frequently, until the red onion begins to soften, about 5 minutes.

2 teaspoons cinnamon
1.5 teaspoons baking powder
1/4 teaspoon salt
FOR THE CRUMB TOPPING
1/2 cup flour plain or whole wheat
1/2 cup brown sugar
1 teaspoon cinnamon
1/4 cup butter

Heat the oven to 360°F. Grease a 9×5 inch loaf tin.

Divide batter in-between the two cake pans. Bake on 350F for 45-50 minutes, then chill in freezer while you make frosting.
For frosting, steam sweet potato cubes, then drain water, and combine with rest of frosting ingredients until smooth (about 5 minutes). Chill until ready to frost.

1 tsp. beef gelatin
2 tbsp. water
Instructions
Filling Instructions:
Separate your egg yolks and set aside.
In a medium saucepan, on low medium heat, pour in the coconut milk and ½ cup powdered Swerve.
Stir constantly to allow the swerve to dissolve and avoid burning the milk.
When the milk just gets hot you’ll want to temper the egg yolks by adding 4 tbsp. of milk, whisking constantly.

Add the lamb and stir until it is thoroughly cooked and browned.

5-6 tablespoons pickle juice
1/3 cup finely chopped dill pickle

Mix cream cheese until soft, add in pickle juice a little at a time to reach desired consistency. Remember the dip will be thicker once refrigerated.
