Sheet Pan Steak and Potatoes

This was tasty. To be fair, I completely changed the recipe to suit the tastes of my house. I marinated the steak overnight in Montreal steak seasoning, and I made.


INGREDIENTS:
2 pounds baby red potatoes
16 ounces broccoli florets*
2 tablespoons olive oil
3 cloves garlic, minced
1 teaspoon dried thyme
Kosher salt and freshly ground black pepper, to taste
2 pounds (1-inch-thick) top sirloin steak, patted dry

DIRECTIONS:
Preheat oven to broil. Lightly oil a baking sheet or coat with nonstick spray.
In a large pot of boiling salted water, cook potatoes until parboiled for 12-15 minutes; drain well.
Place potatoes and broccoli in a single layer onto the prepared baking sheet. Add olive oil, garlic and thyme; season with salt and pepper, to taste. Gently toss to combine.

Grilled Mushroom Cheesesteaks

Grilled mushrooms and grilled onions with a light cheese sauce makes for the ultimate vegetarian cheesesteak.

ingredients
For the mushrooms:
1 tablespoon olive oil
1 medium onion, sliced thinly
20 ounces baby bella or white button mushrooms, sliced
1 tablespoon reduced sodium soy sauce
1/4 teaspoon black pepper

For the “cheese whiz” sauce:
1 tablespoon unsalted butter
1 tablespoon all-purpose flour
2/3 cup low-fat milk (warmed for 1 minute in microwave)
4 ounces Cabot Extra Sharp Cheddar
4 (6-inch) whole-wheat rolls

instructions
In a grill pan, heat olive oil over medium heat. Add onion and cook for about 5 minutes, stirring occasionally.
Add mushrooms and grill for about 10 minutes, stirring occasionally.

Peanut Butter Cookie Lasagna

Don’t you love quick and easy dessert recipes, especially ones that don’t even require an oven! This Peanut Butter Cookie Lasagna is a great dessert for everyone,no matter what the occasion!



Ingredients
1 box Nutter Butter Cookies
Cool Whip or whip your own fresh whipped cream (1 cup cream plus a drop of sugar for sweetness)
peanut butter cups
½ cup peanut butter, melted in microwave
1 box instant or regular vanilla pudding, prepared according to package
Instructions
Line the bottom of an 8x8 pan with Nutter Butter Cookies.
Top with a drizzle of the melted peanut butter.
Add ½ the pudding.
Add half the cream. (I like to use a pastry bag so it is pretty but you can spread it if you prefer.)

1/2 cup maple syrup
1 tablespoon Agar powder, or gelatin
1/4 cup hot water
8 oz low fat cream cheese
1/4 cup heavy cream
10 oz organic frozen raspberries, thawed
Crust

1/3 cup oats, gluten free
1 tablespoon chia seeds
8 graham crackers, gluten free
1/4 cup coconut oil, melted
1 tbsp almond milk
1 tbsp dark cocoa powder
DIRECTIONS:
In a food processor pulverized the oats and graham crackers. Transfer to a mixing bowl and add in the cocoa powder and chia seeds. Incorporate the melted butter and soy milk and combine. Press mixture down onto the mini cheese cake pan molds with removable bottom.

Save Canestrelli Delicious Italian Cookies

Canestrelli a wonderfully delicious Italian Cookie, an almost shortbread type cookie but with a crunch, fast and easy. The perfect afternoon tea cookie.


Ingredients
1 cup flour (130 grams)
1/2 cup + 1 1/2 tablespoons powdered sugar (75 grams)
pinch salt
3/4 cup + 2 tablespoons corn starch (100 grams)
2/3 cup cold butter cut into pieces* (150 grams)
1/2 teaspoon vanilla
3 hard boiled egg (use just the yolks)
zest 1/2 lemon
*I use salted butter if you use unsalted add 1/4 teaspoon of salt

Instructions
Place eggs in a pot and cover with cold water, heat until boiling, then remove from heat and let sit 8-10 minutes. Place under cold water. Remove shell when cooled, separate the white from yolk and mash just the yolk part, well with a fork.
In a food processor whisk together flour, sugar, salt, corn starch and zest, then add cold butter and vanilla, pulse a few times to mix, add egg yolks and pulse until almost combined, move to a lightly floured flat surface and knead gently until combined. Wrap in plastic wrap or parchment paper and refrigerate for at least an hour or two or even overnight.

This chocolate caramel tart is absolutely amazing. A buttery almond crust, gooey salted caramel and bittersweet chocolate ganache, all garnished with salted crystals.

Almond Chocolate Sweet Pastry
1 1/4 cups (160g) flour
1/4 cup (30g) ground almonds
1/4 cup (30g) unsweetened cocoa powder
1/4 cup (50g) sugar
1/4 tsp salt
1 stick (110 g) cold unsalted butter, cut into small (1/2-inch) cubes
1 tsp vanilla extract
1 egg
1-2 tbsp ice water
Caramel
1 1/2 cups (300 g) sugar
1/2 cup water
1/2 cup (120 g) heavy cream
5 tbsp (70 g) unsalted butter
1 tsp salt
Chocolate Ganache
1/2 cup (120 g) heavy cream
4 oz (120g) bittersweet chocolate, chopped
Garnish
sea salt crystals

Directions

Mom’s Fantastic Holiday Fudge Recipe

Who wants to try some holiday fudge? You're in luck! Use this recipe to make a batch of Mom's Fantastic Holiday Fudge and enjoy!



INGREDIENTS:
4 1/2 c. sugar
Pinch salt
14 1/2 oz. evaporated milk
1 stick butter
2 t. vanilla
12 oz. chocolate chips
12 oz. (3 bars) German sweet chocolate
1 pint (2 jars, 7oz. each) marshmallow creme
2 c. chopped nuts



DIRECTIONS:
Combine sugar, salt, butter and milk and bring to a boil. Boil for 6 minutes or until a candy thermometer reads 234 degrees (soft ball stage). Mix the chocolate chips, German sweet chocolate, marshmallow creme, nuts, and vanilla in a large bowl. Pour the boiling syrup over ingredients in the bowl. Beat until the chocolate is melted and pour into a greased 9×13 pan. Let stand a few hours before cutting.

Frosting
1 3/4 cup sweet potato cubed
1/2 cup avocado
1/2 cup soft medjool dates pitted
1/2 cup cocoa powder
1 teaspoon vanilla extract
1/4 teaspoon sea salt
INSTRUCTIONS
Preheat oven to 350F. Line the bottom of two 6" spring form cake pans with rounds of parchment paper.
In a food processor mince sweet potato. Then in a blender combine all ingredients for cake until smooth.
Divide batter in-between the two cake pans. Bake on 350F for 45-50 minutes then chill in freezer while you make frosting

Flourless Brownies

These flourless brownies are soft, moist and melt in your mouth. The brownies are made without any flour, so they are gluten free, grain free and also paleo and dairy free.



Ingredients

Dry ingredients:
3/4 cup coconut sugar or brown sugar (150 g)
3/4 cup ground almonds (90 g) (*see recipe notes)
1/2 cup + 2 tbsp cocoa powder (60 g)
2 tbsp ground flax seeds or ground chia seeds
1 tsp baking powder
1/4 tsp baking soda
Pinch of salt
1/4 cup dairy-free chocolate chips (optional)
Wet ingredients:
Two 15 oz cans chickpeas drained and rinsed (about 500 g)
1/2 cup plant-based milk (120 ml)
1/3 cup nut butter or seed butter of choice (80 g) (*see recipe notes)
1/2 banana or 1/4 cup applesauce (60 g)
2 tsp vanilla extract
Frosting
sweet potato frosting (optional)
Instructions
Blend the chickpeas with all wet ingredients in a food processor until smooth.
Add all dry ingredients (except the chocolate chips) to the food processor and blend again until the mixture is combined.
Line a pan with parchment paper or grease it with vegan butter or coconut oil and spoon the batter into it. My baking dish measures 9"x6" (23 x 15 cm).

1/2 cup honey
1/2 cup coconut oil
2 1/2 cups rolled oats
1 cup shredded coconut
1/4 cup chocolate chips (or mini chocolate chips)
Directions:

In a medium pot, melt together nut butter, honey, and coconut oil over medium-low heat, stirring until smooth. Remove from stove and stir in oats and coconut.
Pour mixture into a 9- by 13-inch baking dish. Spread into an even layer, sprinkle with chocolate chips, and firmly press down with the back of a spatula.

FOR THE CRUMB TOPPING
1/2 cup flour plain or whole wheat
1/2 cup brown sugar
1 teaspoon cinnamon
1/4 cup butter
INSTRUCTIONS
Heat the oven to 360°F. Grease a 9×5 inch loaf tin.
Whisk together all wet ingredients in a large bowl. Sprinkle flour, cornstarch (OR extra flour), cinnamon, baking powder and salt on top. Gently fold in, do not overmix!

1 cup rolled oats
1/2 cup nut butter (I used a mixture of peanut and cashew)
2 tbsp honey
2 tbsp desiccated coconut
1 tbsp chia seeds
1/2 tsp vanilla extract
To decorate: 20g dark chocolate

Mix the oats, nut butter, honey, coconut, chia seeds and vanilla extract together in a bowl until fully combined.
Roll the mixture into equal size bites. I made 15 bites from my mixture but you can make more or less depending on what size you want them to be. Place the bites in the fridge to firm up.

8 oz cream cheese softened
1 1/2 cups unsweetened cocoa powder
3 teaspoons vanilla extract
7-8 cups powdered sugar
about 1/4 cup milk as needed

Instructions
The Most Amazing Chocolate Cake
Preheat oven to 350 degrees. Butter three 9-inch cake rounds. Dust with flour and tap out the excess.
Mix together flour, sugar, cocoa, baking soda, baking powder, and salt in a stand mixer using a low speed until combined.
Add eggs, buttermilk, warm water, oil, and vanilla. Beat on a medium speed until smooth. This should take just a couple of minutes.
