Save Canestrelli Delicious Italian Cookies

Canestrelli a wonderfully delicious Italian Cookie, an almost shortbread type cookie but with a crunch, fast and easy. The perfect afternoon tea cookie.


Ingredients
1 cup flour (130 grams)
1/2 cup + 1 1/2 tablespoons powdered sugar (75 grams)
pinch salt
3/4 cup + 2 tablespoons corn starch (100 grams)
2/3 cup cold butter cut into pieces* (150 grams)
1/2 teaspoon vanilla
3 hard boiled egg (use just the yolks)
zest 1/2 lemon
*I use salted butter if you use unsalted add 1/4 teaspoon of salt

Instructions
Place eggs in a pot and cover with cold water, heat until boiling, then remove from heat and let sit 8-10 minutes. Place under cold water. Remove shell when cooled, separate the white from yolk and mash just the yolk part, well with a fork.
In a food processor whisk together flour, sugar, salt, corn starch and zest, then add cold butter and vanilla, pulse a few times to mix, add egg yolks and pulse until almost combined, move to a lightly floured flat surface and knead gently until combined. Wrap in plastic wrap or parchment paper and refrigerate for at least an hour or two or even overnight.

Mom’s Fantastic Holiday Fudge Recipe

Who wants to try some holiday fudge? You're in luck! Use this recipe to make a batch of Mom's Fantastic Holiday Fudge and enjoy!



INGREDIENTS:
4 1/2 c. sugar
Pinch salt
14 1/2 oz. evaporated milk
1 stick butter
2 t. vanilla
12 oz. chocolate chips
12 oz. (3 bars) German sweet chocolate
1 pint (2 jars, 7oz. each) marshmallow creme
2 c. chopped nuts



DIRECTIONS:
Combine sugar, salt, butter and milk and bring to a boil. Boil for 6 minutes or until a candy thermometer reads 234 degrees (soft ball stage). Mix the chocolate chips, German sweet chocolate, marshmallow creme, nuts, and vanilla in a large bowl. Pour the boiling syrup over ingredients in the bowl. Beat until the chocolate is melted and pour into a greased 9×13 pan. Let stand a few hours before cutting.

1 cup  milk (240 mL)

2 tablespoons  vanilla extract
2 tablespoons  lemon juce
¾ cup  heavy cream, optional (180 mL)
1 ½ cups  strawberry, diced, divided (225 g)
⅓ cup  sugar

Preparation
Whisk eggs, cinnamon, vanilla and milk together in medium-large bowl to create egg wash.

An easy no bake recipe for gluten free Energy Bites made with oats, nut butter and chia seeds\



INGREDIENTS
1 cup rolled oats
1/2 cup nut butter (I used a mixture of peanut and cashew)
2 tbsp honey
2 tbsp desiccated coconut
1 tbsp chia seeds
1/2 tsp vanilla extract
To decorate: 20g dark chocolate

INSTRUCTIONS
Mix the oats, nut butter, honey, coconut, chia seeds and vanilla extract together in a bowl until fully combined.
Roll the mixture into equal size bites. I made 15 bites from my mixture but you can make more or less depending on what size you want them to be. Place the bites in the fridge to firm up.

Flourless Marshmallow Crunch Brownies

For the Brownies*:
2 cups white sugar
3/4 cup vegetable oil
4 large eggs
2 teaspoons vanilla
1 1/2 cup dark cocoa powder
1/4 teaspoon salt
1/2 cup chocolate chips or chopped chocolate


For the Topping:
1 bag mini marshmallows (10.5 oz. or 5.5 cups)
2 cups chocolate chips (or chopped chocolate)
1 1/4 cups peanut butter
5 tablespoons butter
3 cups Rice Krispies, gluten free if needed (I actually used Cocoa Krispies because I strangely can't find plain here. Not complaining.)


Preheat the oven to 350°F. Lightly grease a 9x13 inch baking pan. 
Combine the sugars and oil and beat until well combined. Add in the eggs and vanilla and whisk together. Beat for about two minutes. 
Add the cocoa powder and salt to the batter and blend until smooth. Fold in the chocolate chips. Pour into prepared pan. 
Bake the brownies for about 17 minutes and then top with the marshmallows. Continue baking 8 more minutes (if using a different recipe for the brownies, just make sure you add the marshmallows during the last 8 minutes of bake time). Allow to cool while you prepare the topping.

2 cups whole milk

1 1/2 cups heavy whipping cream
3 tablespoons powdered sugar

Instructions
Combine lemon instant pudding mix, whole milk, and fresh lemon juice in a mixing bowl. Whisk together until pudding is thick (about 2 minutes).
Spread 1 1/2 cups onto the prepared crust.
Beat the heavy whipping cream and powdered sugar in the bowl of a stand mixer, or with a handheld blender, until stiff peaks form. This takes about 5 minutes.

1 teaspoon baking soda
pinch salt, optional and to taste
35 caramel squares, unwrapped (I used Werther’s Originals Baking Caramels which are slightly bigger than cellophane-wrapped caramels; if using those, I recommend using a couple more)
1/2 cup heavy cream
1/2 teaspoon salt, optional and to taste, if you prefer salted caramel sauce
1 cup (6 ounces) semi-sweet chocolate chips or chunks (I used a combo)

DIRECTIONS:

Preheat oven to 350F. Line an 8×8-inch pan with aluminum foil and spray with cooking spray. Lining your pan is highly recommended for ease of cleanup due to the stickiness of the caramel; set pan aside.
In a large microwave-safe mixing bowl, add the butter and heat on high power to melt, about 90 seconds.
