Low Carb Fajita Burrito Lettuce Wrap

A low carb fajita burrito lettuce wrap is the perfect way to have your Mexican food on a low carb diet. All of those Mexican flavors wrapped up for a handheld lettuce burrito!



Ingredients
Meat. Marinade
1/4 cup olive oil
2 tablespoons lime juice
2 cloves garlic, crushed
1/2 teaspoon salt
1/4 teaspoons cumin
1/4 teaspoon oregano
1 lb beef steak, cut into thin strips
Lettuce Wraps
1 onion, sliced
2 cups pepers sliced
1 tablespoons olive oil
1/2 teaspoon salt
1 teaspoon chili powder
18 leaves iceberg lettuce
3/4 cup shredded cheese
1 avocado, thinly sliced
Instructions
The night before, mix the marinade and add with the meat to a large zipper bag. Make sure all the meat is covered with the marinade.

The next day, add the oil to a large saute pan and heat up to medium high. Add the meat mixture as well as the salt and chili powder. Cook for about 10 minutes until the meat is browned.

Broccoli Salad Delicious

INGREDIENTS

Broccoli Salad
1 broccoli head, approx 5 cups of florets
8 slices bacon
1/3 cup red onion, diced
1/2 cup dried cranberries
1/2 cup sunflower seeds
1/4 cup goat cheese, crumbled
Broccoli Salad Dressing
1/2 cup mayonnaise
1/4 cup plain yogurt

INSTRUCTIONS
Preheat the oven to 400 degrees fahrenheit. Add the bacon slices to a parchment lined baking tray and cook for 15 minutes or until crispy. Remove the bacon from the oven and transfer to a paper towel to dry and cool.

1 large avocado, peeled, pitted and finely diced
3 hard boiled eggs, roughly chopped
2 tbsp red onion, chopped
2 tbsp mayonnaise
1 tbsp chives, chopped
1 tbsp parsley, chopped
1 tsp lemon juice
salt and pepper
lettuce leaves, optional, for serving

Add all of the ingredients to a mixing bowl and stir to combine.
Eat the avocado egg salad plain, topped on your favorite bread or on lettuce leaves.

Bang bang cauliflower

Cauliflower gets battered, baked and then topped off with a sweet and spicy chili sauce!



INGREDIENTS
Cauliflower: 

1 cup gluten-free flour (can sub regular flour, spelt flour…etc.)
1 cup almond milk
1/2 tsp salt
1/2 tsp pepper
1 head of cauliflower, cut into florets
Bang bang sauce: 

1/3 cup sweet chili sauce
1 tsp sriracha
1 tsp soy sauce
2 tsp lime juice
2 garlic cloves, finely chopped
INSTRUCTIONS
Preheat the oven to 450 degrees F and line a baking pan with parchment paper
Mix the flour, almond milk, salt and pepper together in a bowl until smooth.
Dip each piece of cauliflower into the batter, let any excess batter drip off then place the cauliflower bites on the baking pan.

Save Canestrelli Delicious Italian Cookies

Canestrelli a wonderfully delicious Italian Cookie, an almost shortbread type cookie but with a crunch, fast and easy. The perfect afternoon tea cookie.


Ingredients
1 cup flour (130 grams)
1/2 cup + 1 1/2 tablespoons powdered sugar (75 grams)
pinch salt
3/4 cup + 2 tablespoons corn starch (100 grams)
2/3 cup cold butter cut into pieces* (150 grams)
1/2 teaspoon vanilla
3 hard boiled egg (use just the yolks)
zest 1/2 lemon
*I use salted butter if you use unsalted add 1/4 teaspoon of salt

Instructions
Place eggs in a pot and cover with cold water, heat until boiling, then remove from heat and let sit 8-10 minutes. Place under cold water. Remove shell when cooled, separate the white from yolk and mash just the yolk part, well with a fork.
In a food processor whisk together flour, sugar, salt, corn starch and zest, then add cold butter and vanilla, pulse a few times to mix, add egg yolks and pulse until almost combined, move to a lightly floured flat surface and knead gently until combined. Wrap in plastic wrap or parchment paper and refrigerate for at least an hour or two or even overnight.

No Bake Chia Energy Bites

An easy no bake recipe for gluten free Energy Bites made with oats, nut butter and chia seeds\



INGREDIENTS
1 cup rolled oats
1/2 cup nut butter (I used a mixture of peanut and cashew)
2 tbsp honey
2 tbsp desiccated coconut
1 tbsp chia seeds
1/2 tsp vanilla extract
To decorate: 20g dark chocolate

INSTRUCTIONS
Mix the oats, nut butter, honey, coconut, chia seeds and vanilla extract together in a bowl until fully combined.
Roll the mixture into equal size bites. I made 15 bites from my mixture but you can make more or less depending on what size you want them to be. Place the bites in the fridge to firm up.
